If they're willing to do custom paint, maybe they'll do the custom liner for the right price. Did you ask them if more money might make it possible or it's simply physically impossible for them to do it because of the airbags?

Paint has no safety implications. Changing the headliner (and hence changing the airbag deployment) does.
