Is there somewhere that explains what features are available for the 2018 Model S vs. the 2023? For instance the feature of using your phone for a key. Is that avaiable on the 2018 100D Model S?

Yes, the current Tesla App will work for all versions of Model S. Your car will automatically adapt to the current app. I have a 2014 Model S with no autopilot, so "Summon" is not an option on my app.

The phone key for the MS only became available when they added new hardware in the 2021 LR/Plaid and later.

I made an extensive comparison with the outgoing 2020-2021 LR+/Performance and the current LR/Plaid: Model S Comparison for 2021 – TeslaTap
There are a few features in the 2020 LR+/Performance that were not in the 2018 100D, but that list is far shorter. I didn't bother to do that comparison.
