I've looked into driving to Fargo and back, and spotted some RV parks in Saint Cloud that might work for that drive, but that's about as close as I've gotten. It's 115 miles to Brainerd. You can make it, I made it to Duluth and back (wait for my blog!) and in retrospect didn't need a range charge. I drove to Mora, MN last weekend on Hwy 169 and back with 30+ miles left of range (charged up to 190 miles of range), and that was with 5 people in my 60kWh. I averaged 300 wh/mi up and 260 wh/mi back.
I had a 110v outlet in my garage for weeks before I got around to installing my NEMA 14-50. Drive up with a standard charge of 180 miles. Drive perhaps 120 miles and you're down to 60 miles. Average 3 mi/hr of charging, leave Friday at 6:00pm and get there by 8:00pm, then plug in right away. by 8:00am you will have 35 miles, back up to 95 miles. Even if you didn't plug it in at all after 8:00am on Saturday until night time, you could still get back another 35 miles Saturday night, back up to 125 miles 8:00am Sunday morning. A few places there may have an EV charging 110v outlet, so if you went to a restaurant for dinner, pick one near a Kwik Trip, Walgreens, and maybe Country Inns and Suites will have a 110v for a block heater plug.
If you're concerned about range during your weekend, you can go up with a max charge of 208 miles. Drive 55mph, plan everywhere you will drive beyond up and back, and find a charging spot where you can if you leave your home base.
You have a lot of options and you can make the trip, just plan for it.
