Can happen if the air filters get wet - no hot engine to dry them out.

Used to be a much bigger issue, and why the cars now run the a/c for some time after parking.

After driving in rain I tend to blast the a/c on high for a few minutes.
Ahah. Yes that might explain the issue. Even though I've turned off 'maintain cabin temperature', the air conditioning was still running each time I got out of the car so I've been turning it off manually before leaving the car.

Why would you do that? Even before the heat pump was a thing, the air con maintains several other systems that may still need to run when the car isn't being driven. Battery pack cooling for example.
