Weekend retreat recommendations

After all the great tips and stops suggested on our last trip to florida I thought I would try again! I am looking for a good recommendation for a couples retreat or getaway close to Toronto or within 3 hrs.

We visited "Samuels Hotel" in Goderich during our summer 2016 road trip.
It was one of the highlights on our lake Huron destinations.
Excellent food.
Hosts are cultured and have interesting background.
Rooms are tastefully appointed and modern.

Hockey Valley Resort near Orangeville. They have a Spa, skiing, a new Winery and great restaurants.
Also Ste. Ann's Spa near Grafton is pretty awesome.

Deerhurst, in Huntsville is a good year round resort
Stratford, in "theatre season" is a beautiful little town, full of great B&Bs, quaint hotels and interesting shopping - May-September

Yeah I am looking for end of Jan or early Feb. My wife doesnt ski but she will do almost anything else.
