And chance swapping in a 2020 steering wheel and column is possible? I assume of course that would harm the warranty somehow if an issue was traced back to it. And not sure it'd work with the current software as the gear selector is now on the screen.

People have successfully swapped in a Model 3/Y wheel and colckspring (module with the stalks). They mechanically fit identically to the current S/X parts, but you do need a microcontroller board to do CAN spoofing. The S3XY button people claim they are working on a commercial version of this swap.
I have not heard of anybody swapping in a previous-generation S/X stalk assembly and wheel though. That might be a lot tougher since the refreshed S/X essentially switched over to modified 3/Y parts-bin components all throughout the car.
