I am glad to be from Switzerland, not Europe, then. Got the Model S in May 2015 and the 20 inch wheels on order. Driven like that ever since. Not Model X Tesla wheels, but similar dimensions. 20x9 et 35, 20x10 et 40, 245/40 r20, 275/35 r20 No rubbing. No problem.

The advantage of being able to see the dash screen better is exactly the same in the X. Free view, regarding both screens, as much screen real estate as possible. Funny you mention the far right corner in the Model 3, but cannot see the advantage of a yoke, regarding to this.

Does it occur while charging also? Keep below 78%. If you need the full charge for your trip, charge just before leaving. Means: time the charging in a way, it reaches 98, 99... percent as you're about to go. Charging, it won't "waste" energy - it'll start to do so, once charging has finished...
