Made this graph trying to correlate VINs to Matrix/no Matrix using the info from this thread, let me know if you see a mistake:

You can see the break sometime around NF56X where they switched back to LED headlights, and then reintroduced them when I assume stock of headlights were low during the Q4 push.
I think what we're seeing is that different assembly lines will either have matrix or no matrix. Each assembly line would be assigned a VIN range to assemble, which explains why some ranges have matrix and some don't.
For now, it looks like the most recent VINs will have matrix, but it's impossible to know for sure without more data points.
