You could get creative and simply install a toggle switch which would hurt turn the heated wheel on or off there are no temperature adjustments for the heated wheel it is simply on or off. You would still need all of the above hardware and some expertise.

Your 360 system plugs into the HDMI going to the center screen why not just make 4 camera switcher with cameras that plug into same HDMI interface would that be simpler. Sell the switcher and four cameras as an option just like your 360 system

The side cameras are going to give a somewhat limited view I wouldn't overthink it it's not going to be a 360 it's simply going to be blind side at least that's my ceiling
