It looks like they just use the stems. If they're going to have mushroom caps as a "waste" product of the process, perhaps they should investigate Chanterelles. That might be profitable enough that the battery anodes would be considered a by-product.

Interesting read, would be wonderful if it could be made to work. Though whether they would be able to last for 8+ years remains to be seen, and building your batteries around replacing the Anodes would more likely than not nullify most advantages you gain here, if it's even possible.
