Happy Easter - with a traditional lamb cake!


It's been a long tradition in my family to make a lamb cake on Easter. This year I made a whole-grain carrot cake with fresh pineapple chunks and sweetened with VT maple syrup. Covered by a white cream cheese frosting sprinkled with grated cocoanut "fur."
